First a few thoughts on forecasting retail sales.

 

Retail sales are easier to forecast accurately if the customer routinely shops the retail category and it is fairly insulated from small changes in the economy. Most retail categories do not meet this criteria. Grocery stores do and traditionally have been one of the most predictive retailers for sales forecasting. Supermarket forecasting using gravity models examines sales potentials, competitive sizes and sales, barriers, and the projected concept and size. It can be very accurate which is why they have been used for more than 30 years.

 

Is it possible to forecast restaurant sales? Yes. Is it always accurate? No. 

 

A forecasting model that has its accuracy greatly determined by your operations, is not a real predictive model. The information highway is littered with disgruntled customers that paid thousands of dollars, collected all the data, and is then given a model that has a matrix of possibilities that are determined by what your store manager does. Yes you need to operate the new unit to the same expected standards as you do the existing ones. Who wouldn't. We think it is more honest to locate your restaurants in the best opportunities to capture "your" customers than it is to suggest we can accurately tell you what your sales may be.
